Roast Chicken Recipe Roundup

I remember when I first cooked up a whole chicken. I was in my late 20s and intimidated to try. Partly because we were purchasing happy roasting birds from a local farm and I didn't want to mess them up. But also because a whole roast chicken was not something my mom usually cooked except for a turkey on the holidays.

With some guidance from my friend who turned me on to Jamie Oliver, I found a recipe that we loved (and still use to this day). I'm certainly not intimidated to try new whole bird recipes anymore, but wanted to share a few in case there are some of you still looking for a good one to use as your "go-to".

Jamie Oliver's Perfect Roast Chicken

(I love how simple this one is & I roast our veggies at the same time. Don't skip the lemon inside... it brings out the most delightful flavours in the meat!)
