This a fully cooked sausage, so no need to cook it before you eat it.
Summer sausage made with Yak is a real treat. The light flavours of curing, garlic, pepper, and mustard are all there giving it its own identity when paired with other meats in a sub or sandwich. It is fantastic lunch meat and if you are looking for a lunch meat to take to the school or office (where the animals are humanely raised without chemicals) this Summer Sausage is a great choice.
ProTip: That same section of sausage can also be prepared to make a most excellent hash with potatoes. Peel it, cut it up, fry it with some onions and diced new potatoes, sprinkle it with parsley; and it is just begging to be plated up to a couple of eggs to make unforgettable breakfast. We know this because to get the Sausage to stay on the plate for the picture we trimmed the bottom (to create a flat surface).
